Thyme and Sage Coconut Fish in Parchment Paper
SERVES TWO (420 calories per serving)
2, 5-6 ounces of white fish fillets
1 carrot
Half a leek stem
Cream fromĀ can of coconut milk
2 T butter, softened
A few sprigs of thyme
A few sheets of sage
INSTRUCTIONS
Preheat oven to 420 degrees F
Cut the white fish fillet into portions of approximately 5-7 ouncesĀ and add some salt. Place the fish fillets on the parchment paper. Add 1 T cream from coconut on top of each fillet. Spread butter mixed with pepper, grated carrots and onions over the fish, sprinkle with lemon juice and add the greens, then seal the packets.
Bake on a baking sheet for 10 minutes. Remove and serve immediately.
