Happy Monday! This Wednesday you’ll start the Week Three Meal Plans. Make sure that you read this email all the way through. This evening, soak your quinoa overnight and sprout it for two days (see video and instructions below). I recommend that you look over the week three meal plans, instructions and recipes today. Skim through the shopping list and tick off what you already have on hand. I have italicized the few ingredients on the shopping list that you should still have from the week one and week two shopping trip. Then, shop for the week two meal plan tomorrow, so you’ll have the freshest ingredients on hand for the week ahead. 
This week you have the option of soaking your almonds again. If you would rather opt to include raw almonds over raw soaked almonds, feel free. However, soaking almonds is incredibly easy! I’ll send you a reminder tomorrow to soak your almonds overnight to use in the Week Three meal plans. How to Soak & Sprout Quinoa This week you will soak and sprout your quinoa to use in the Mason Jar salad recipe on Wednesday. The Mason Jar salad recipe calls for 3 3/4 cup cooked sprouted quinoa. You will need to sprout approximately 2 cups of quinoa for two days and then cook the quinoa. When you cook quinoa or sprouted quinoa it will double in size from dry to cooked, when it absorbs the water during the cooking process.
